Vegetable pulao
Ingredients:                                       Quantity
Rice                                                       1 glass
Cumin Seed                                          1tsp
Bay Leaves                                            2
Cinnamond                                           2inch
Black cardmom                                    1
Green Cardmom                                  2
Cloves                                                    4
Black peeper                                         6 to 8
Water                                                     2 glass
Green peas                                             1/3 cup
Onion                                                      2 medium size
Potato                                                      1
Frech beans                                            1/3 cup
Cauliflower                                            1/2 cup
Carrot                                                    1/3 cup
Paneer                                                    100gm
Green chili                                             2
Cooking Oil                                           2tbsp
Ghee                                                       2tbsp
Salt                                                         to taste
Method:
First of all turn on the flame and heat a pan.Now add oil and ghee together let it heat properly add all the whole spices and fry it for few seconds on medium flame.
Now add oinon,add green chili stir it.fry it for 3-4 mins on medium flame.open the lid and stir it.keep onion on one half of the pan and fry the panner on other half .once the paneer is shallow fried,take it out it from the pan .keep it aside.
Once the onion turns brown ,add all vegetables.increase the flame to medium and mix it.cook the vegetables for 4-5 mins on medium flame .keep stirring in between
in the meanwhile ,wash the rice.open the lid and stir it.Now add wash rice and mix it well.cook the rice for 1/2 mins on medium flame,keep stirring in between and stir it.
Now add water,add sat ,add fried paneer and mix it well.you may discard the whole spices .cook the rice on high flame till it starts boiling.it will take 3-4 mins to boil.
Once the rice starts boiling ,stir it.Reduce the flame to medium and cook it till it gets dry(it takes approx. 7-8 mins ).cover the pan pratically like this
open the lid and check the dryness of rice using spoon or knife.make sure there is no water left in rice.cover the pan compeletlely and cook it for a minute on low flame.open the lid and check it,
if the knife comes out dry then turn off the flame,if not then cook it for another minute.cover the pan and turn of the flame,leave it for 8-10 minutes.open the lid and stir it with knife
vegetable pulao is ready it for serving!
