Carrot & Rice Pudding
Ingredients:
Milk                                               Fresh & boiled 1 & ½ liters
 Rice                                              Soaked ¼ Cup
Carrots                                          Grated 300 gms
Cardamom powder                    ½ TBS
Sugar                                           ½ cup
Pistachio                                     chopped 2-3 TBS
Almonds                                     Blanched & chopped 2-3 TBS
Mathod:
Rinse, peel and grate the carrots.
In pot,heat milk,add rice (crushed) and carrots, mix well.
Add cardamom powder,cook on low flame for 15-20 minutes and keep stirring in between.
Now add sugar,mix well until sugar is dissolved.
Cook until milk is reduced and thickened.
Add pistachio and almonds, give it a good mix.
Serve hot or cold.
